Welcome to our new feature column!  Each week we are excited to spotlight an exceptional local business and get to know a little more about what makes them stand out from the rest.  In this case we are lucky to get to know Eva and Ole Sellberg from Restaurant Frederiks Have, and learn the history and passion that drives the success of their top rated restaurant.

 

In 2009 Frederiks Have was awarded the Bib Gourmand award in the Michelin Guide, giving it accolades for an excellent meal under €31.  The restaurant’s courses are inspired mostly by Nordic cuisine, with specialties from Denmark and further north in Scandinavia. Please introduce yourself and your business.  Where is it located?

Restaurant Frederiks Have is located in a residential area on a small side street to Smallegade – Virginiavej.  Since 2000 owned by Eva and Ole Sellberg.

How did you end up in the business you’re in?

We were both educated in restaurants as waiter and chef and it was always our dream to open a restaurant by ourselves. After looking all over the country, Ole got a job at Frederiks Have. The place, charm, history and location, made us fall in love with the restaurant, and when it came up for sale, we decided to try, and is has been our life since.

What would surprise people about your business?

People might be surprised to find a small gourmet restaurant in our area, our hospitality and compassion to the work we do.

What hopes/goals do you have for your restaurant in the future?

Our hopes and wishes for the future, is to have the ability to keep improving and developing with respect to our values which is the joy and the presence. Our goal is to be the favorite choice of restaurant for guests, both private and business, for lunch as well as dinner, who look for a restaurant where you feel security and responsibility.

What is your favorite thing about your job?

The restaurant business is always changing, every day and every guest is different. We love working with our engaged staff, who helps solving the daily challenges. And we love the joy we give to our guests.

Running a restaurant demands knowledge, money and last but not least persistence.

How would you spend a perfect weekend in your city?

Frederiks Have is open every day except Sunday, so our weekends is just one day: Sunday. We love Frederiksberg Garden at all times of the year.

In the summer you can sail along the rivers in the garden. If Tivoli is open, it is always worth a visit. On warm summer days we would take our bikes to Amager beach and take a swim in the ocean.
